Easy Meals and Sides For Busy Families

Egg Bake
*Cook meats (sausage, beef, bacon, hame, your choice) and spread across bottom of 9X13 dish.
*Beat 12 eggs.  Add 3 cups milk.  Add salt/pepper.  Mix well.
*Pour egg mixture over meat.
*Dice peppers and onion.  Sprinkle over egg and meat mixture.
*Shred cheddar cheese.  Sprinkle over top.
*Make at 350 degrees until lightly golden on top.






Quinoa Beans and Veggies
Ingredients:
1 cup quinoa (cook according to directions)
1 avocado
1 pepper
handful of cherry tomatoes
1 can black beans
handful of corn
half of a large onion
2-4 cloves garlic (depending on your taste)
2-6 drops lime essential oil
2-6 drops lemon essential oil
cumin
black pepper
feta cheese
Directions:
Cook quinoa according to directions. While quinoa is cooking, put onion and pressed garlic in frying pan (in coconut oil) and saute. While that is cooking, dice up avocado, tomatoes, and pepper. Once garlic and onion are done, add beans and corn. Add cooked quinoa to frying pan, keep on low. Add seasoning and oils. Once on plate, top with fresh ingredients and feta cheese.

Cranberry Sauce
Cranberry sauce is not just for Thanksgiving! I just made this a few nights ago. It is sugar free and so healthy! Add 3-5 drops of orange essential oil to cranberry sauce made with honey (amount changes depending on how sweet you like it). I added coconut flakes this time around.

Pear Salad
Ingredients:
greens (I used baby spinach this time)
blue cheese
pear
pecans (or walnuts)
*You can use an oil dressing, but we love it without the extra calories.

Quinoa Parm
Ingredients:
1 cup quinoa (cook according to directions)
2 chicken breasts
mozzarella cheese
sauce
garlic
oregano
basil
Directions:
Layer a bit of sauce at the bottom of a glass dish. Set chicken in (I sliced in half) dish, put minced garlic, oregano and basil over. Layer a bit more sauce over. Cook chicken at 350 until done. While chicken is cooking, prep quinoa. Cook quinoa according to directions. When quinoa is finished, add sauce (more if you like a lot of sauce on your pasta, less if you like it that way). Put in glass dish. When chicken is done, transfer to glass dish with quinoa. Shred cheese and sprinkle over top. Bake until cheese is melted (I like mine golden).

Quinoa with Berries
*1/2 cup of quinoa, cooked according to directions
*small handful of each kind of berries (I used blueberries, raspberries, blackberries and strawberries)
*3 TBSP honey mixed with 2-4 drops each of lime, lemon and orange essential oils

Mix all together and serve!


Chocolate Covered Clementines
2 clementines
handful of chocolate chips
*sea salt (optional)
Dip clementine slices in melted chocolate. Sprinkle sea salt over the tops (if using). Put on wax paper and freeze for a few minutes. Serve chilled.
